SEAFOOD BURGERS
Now some people might like to regard these as fishcakes, but I don’t. A fish cake can contain a minor part of fish made up with potato, etc. My burgers contain a major portion of fish and no additives, freeze them, grill them, fry them or, my favourite, BBQ them. Just enjoy them. If you want any advice on sauces, etc. please ask. All burgers are in 4oz portions.

Sea Bass and Fine Herbs - So full of subtle flavours this could be in a top restaurant and so, can I have another please. Make a white wine butter sauce to accompany.

Three Fish Thai Burger - Classic flavours, great texture with a hint of coriander and celery, quite filling and wow the flavour. Grill this one for best result, I love it with a spicy sweet chilli sauce.

Prawn Burger - This is the hardest burger to make as it has a tendency to fall apart when cooked so cook it slow, also the prawns here seem to lack in flavour so I soak them in fish stock with a little brandy in to accentuate the flavour.

Now for all you fishermen out there how would you like your caught fish to be prepared by a professional chef - be it sausages, burgers or a fully dressed dish, if you like I may in the future be able to smoke it for you, just ask nothing is too much trouble.
